Plantation Rum Distillery Tour

Trinidad has always been an important land for the cultivation of sugar cane, keeping rum production as a marginal activity. At the end of the 18th century, under British governance, significant volumes of rum travel to England where they are blended with other rums from the British Crown (Barbados, Demerara, Jamaica) and give birth to “Navy Rum”.

In the world of spirits, another category marks the history of Trinidad: bitters. In the 19th century, the Siegert family moves the Angostura Bitters factory to the Port of Spain. Where would today’s bartenders across the world be without the existence of a Prussian family whose mission it was to limit the effects of high fever on the troops of Simon Bolivar? After the First World War, Robert Siegert, the grandson of the founder, begins researching the rum industry: a distillery results, distinguishing itself from the others in the region. It is a modern distillery, the result of careful scientific research, possessing multiple distillation columns which replace the traditional pot stills.

Today, rum accompanies the great life celebrations for Trinidadians, especially during Carnival, an important and happy event in the region.

Chairman's Reserve Dockside Rum Tasting Party

Laurie Barnard, the late “Chairman” of St. Lucia Distillers, inspired and created the iconic brand Chairman’s Reserve in 1999. His vision to define and reinvent the Saint Lucian rum category was unlike anything rum had seen before or has seen since. While other distilleries were purchasing column stills to increase production, Laurie was investing in eclectic barrel types, small pot stills, a proprietary yeast strain, and sugarcane. He believed that the best rum was not achieved from one barrel but by blending different components together of different ages, finishes, styles, and base materials.

Laurie was born in Saint Lucia in 1945 and didn’t waste any time following in his father’s footsteps in the agriculture industry. At the age of 18, he began working alongside his father Denis on the estate managing the sugarcane and banana business. Soon after, in 1969, he became GM of the vast agricultural farm which had become the largest banana farm in the Winard islands and employed over 500 people. At the same time, he also assumed responsibility for the distillery and began his love affair with rum and the endless possibilities it provided.

One of the oldest cities in the Caribbean, Bridgetown, Barbados, has a compact, walkable downtown that is surrounded by a sprawl of wooden houses, 19th-century coral-stone villas and modern homes. Fragrant flowers and lush trees are everywhere. You could easily spend the day just exploring the streets—particularly between Broad and Swan streets, where you'll find elegant shops as well as fruit and produce stalls.

The heart of town is next to the Careenage (the inner harbor of Bridgetown's port), where you can explore Barbados' seafaring roots, stroll the boardwalk and meander among the cafes and shops that line the waterfront. The area gets its name from an old ship-maintenance practice. Sailing ships were careened (tilted) there so the barnacles could be scraped off their hulls.

Arrive Saint Pierre

Saint-Pierre, Martinique, is often called the Pompeii of the New World—in 1902, about 30,000 people perished under a cloud of molten ash and poisonous gas there, about 20 mi/32 km north of Fort de France. Before Mount Pelee erupted, Saint-Pierre was often likened to Paris for its beauty and sophistication. As you walk the streets that were dug out of the ashes, consider what Saint-Pierre was like a century ago. The town had three newspapers, several consulates and an intricate trolley line. Some of the stone two-story homes were equipped with running water, electricity and telephones.

Only one person survived the Saint-Pierre disaster: a prisoner sleeping off a raucous night in a stone cell. He went on to fame in the U.S. as part of the Barnum and Bailey circus. His cell can be seen in the ruins of the prison, situated right next to the ruins of the old theater, also worth a visit.

The town of Le Carbet, south of Saint-Pierre, marks the spot where Columbus landed in 1502, and has beautiful gray sand beaches.

Island Tour Neisson Rum Tasting

We will spend the day touring the island visiting sites such as Le Morne Rouge, Columbus's Landing, Forte de France, and much more. 9:00

Arrive Cabrits Dominica

Situated on a volcanic peninsula on the northwest coast of Dominica, 2 mi/3 km north of Portsmouth, the Cabrits National Park comprises two dry forest-covered peaks and, where they connect to the mainland, the island's largest swamp.

Visitors can easily spend all day in the park, which can only be explored on foot. Unlike some of the island's other nature areas, hiking in Cabrits won't leave you breathless—though the scenery is certainly breathtaking. It is particularly fun to discover garrison ruins and canons hidden in the forest undergrowth.

One of the most scenic vistas is from Fort Shirley, the main part of the 18th-century garrison that was constructed by the British. It's made up of several restored buildings and a small museum that includes displays about history and nature. The view of the sea and Portsmouth is fantastic.

Cabrits means "goats" in several Latin-based languages and refers to the animals that were left in this area by sailors so that they would have a source of meat when they returned.
